It Isn't Easy Being Green And Gluten-Free
from:It's estimated that roughly 15% of the population are vegetarian, people abstaining from eating meat, while another 4% are estimated to be vegan, people abstaining from using any animal products at all.
People go vegetarian and vegan for a wide variety of reasons, but in this day and age where everyone is concerned about green house gasses and global warming, a new and emerging reason is to help the environment. In a 2006 report, the United Nations (U.N.) said that raising animals for human consumption creates more greenhouse gases than all the cars and trucks in the world combined. So it's no wonder the number of people who are vegetarian or vegan is on the rise. But what about people who want to help the environment by being a vegetarian or vegan but also have another pre-existing dietary restriction?
Meet Aaron, a 24-year-old vegetarian and graphic design major attending MIT. Aaron has an auto-immune disorder called Celiac disease which keeps his body from digesting gluten-containing foods such as wheat products which include things like bread, pasta, pizza, cookies and a number of other items.
"Almost everything in the American diet contains wheat. You'd never realize it until you had to start looking out for it." Aaron says, "I now have to eat an entirely gluten-free diet plus my vegetarian diet which of course means no meat products."
Aaron admits that living as a gluten-free vegetarian is difficult, but, "there are a lot of new resources out there that are great." One of the resources Aaron praises is Vegiac.com (http://www.vegiac.com), an online community for vegetarians and vegans who have Celiac disease. Aaron says he uses Vegiac.com to find "vegiac friendly" restaurants, as he phrased it, safe recipes and to connect with other people who share his dietary restrictions.
Vegetarianism and veganism can really help our current situation of global warming, increasing green house gases, and general environmental conditions. If you're kind and conscious enough to adopt an earth and animal friendly cause like becoming a vegetarian or vegan, hopefully you don't have other dietary restrictions you have to worry about. But if you do, hopefully the internet will be able to provide you with help and resources for your specific diet.
